If you love the rich darkness of chocolate and the creaminess of avocado, then you’re going to love this recipe.  Tastes so delicious, it’s hard to believe that it’s so good for you.

CREAMY CHOCOLATE CHIA PUDDING

Prep time: 10 minutes

Serves: 4

HERE’S WHAT YOU’LL NEED:

  • 1 can of coconut milk (14 oz size)
  • ½ cup of water or coconut water
  • ½ ripened avocado
  • ⅓ cup of chia seeds
  • ¼ cup of cacao (or dark cocoa)
  • 4 medjool dates, de-pitted
  • ½ teaspoon of ceylon cinnamon
  • 2 tablespoons of maple syrup (optional), if you like it sweet.
Suggestive Toppings:

Fresh berries and whipped coconut cream, cacao nibs and/or pepita seeds

HERE’S HOW TO MAKE IT:

  1. Add all the ingredients (except for toppings) in a blender and blend until smooth.
  2. Once blended, refrigerate for 30 minutes.  
  3. Top with fresh berries and whipped coconut cream.
