RICH CHOCOLATE ZUCCHINI LOAF

I fell in love with this recipe and I’ve been making it ever since.  It’s a family favourite in our home and I believe it will be for you too.  It combines the nutrients of whole grains, natural sweeteners, the goodness of zucchini and the richness of dark chocolate.  Need I say more?

You may want to double up on the recipe and make more than one batch.  It tends to be eaten very quickly.

RICH CHOCOLATE ZUCCHINI LOAF

Prep time: 25 minutes

Cooking time: 1 hour (worth every minute)

HERE’S WHAT YOU’LL NEED:

Serves 8-10

  • 1 1/4 cups spelt flour (you can use regular or light variety)
  • 1/4 cup dark cocoa powder or *Cacao powder (see nutrition note below)
  • 2 tsp baking powder, non-aluminum
  • 1/2 tsp baking soda
  • 1/3 cup of real maple syrup
  • 1/2 cup of coconut oil (melted and cooled).  You can also substitute grass-fed butter.
  • 1 egg
  • up to 1/3 cup of non-dairy milk (unsweetened variety).
  • 1 large zucchini grated (about 2 cups), squeezed to remove excess water.
  • 4 oz (115 grams) of chopped *dark chocolate (70% or above).

HERE’S HOW TO MAKE IT:

  1. Preheat oven to 350 degrees F (180 degrees C).  Line a 1.5 litre (10x25cm) loaf pan with parchment paper.
  2. Combine dry ingredients in one bowl, except for chocolate (ie. flour, cocoa powder, baking powder and baking soda).
  3. Combine these wet ingredients (maple syrup, oil, egg) in a separate bowl and whisk together.  Add zucchini into wet bowl and mix with fork.
  4. Add wet ingredients to dry ingredients (including chopped chocolate) and mix with fork.
  5. Add a little non-dairy milk, a little at a time, just enough to coat the mixture so that no dry spots remain.  Aim for a thick like consistency versus a runny batter.
  6. Bake for 1 hour (in the middle rack of oven) until a toothpick inserted into the centre of the loaf comes out clean.
  7. Cool for 5-10 minutes before removing from pan and slicing.
